Abstract:
Though the properties of Georgian polyphenols and anthocyanins grapes have not been thoroughly studied, it has been suspected that they possess oenological potential. This project aims to study and measure the amount of polyphenols in eight varieties of Georgian grapes from different regions of the country. We discovered that the carpological and biochemical signs varied greatly between different types of Georgian grapes and such diversity was particularly interesting for the potential technological-uses of a single, less widespread variety, . The study also took maturity, environmental conditions and agro-technical practice define biochemical parameters into account. Because of the fact, that all the samples were taken from the same collection, and that the same conditions apply to all studied grapes, a striking difference between numbers of anthocuanins and polyphenols, conditioned by genetic properties of these grape varieties, was observed.
