From Juice to Water: Using Organic Chemistry Techniques to Extract the Water from Watermelon Juice

Abstract:
The purpose of this experiment is to see whether it is possible to extract water from the juice of watermelon. The first part of this experiment consisted of obtaining juice from a watermelon. The second part of the experiment consisted of extracting the lycopene (pigment) from the watermelon juice. The third part of this experiment consisted of distilling the juice in order to collect the water. The fourth part of this experiment consisted of running an IR of the product and to determine the % recovery. My hypothesis was correct in that it was possible to obtain water from watermelon juice by extracting the organic compounds followed by distilling the sample at 100 degrees Celsius. More than 60% of water was collected from the amount of juice used to perform this experiment.
